Ingredients

  • 1/2 cup pure maple syrup
  • 3 cups old-fashioned whole oats
  • 1 teaspoon baking powder
  • 1 and 1/2 teaspoons cinnamon powder
  • 1/4 teaspoon nutmeg powder
  • 1/2 teaspoon vanilla essence
  • 1/4 teaspoon salt
  • 1 generous cup chopped peeled apple
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.
  2. In a mixing bowl, whisk together the milk, eggs, maple syrup, and applesauce until well combined.
  3. In another bowl, mix together the oats, baking powder, cinnamon, nutmeg, vanilla essence, and salt.
  4. Gradually add the dry mixture to the wet ingredients and stir until just combined. Fold in the chopped apples.
  5. Spoon the mixture into the prepared muffin tin, filling each cup about three-quarters full.
  6. Bake for about 28 minutes or until golden brown and a toothpick comes out clean.
  7. Let cool slightly before removing from the tin.
