- 1 and 1/2 cups milk (dairy or non-dairy)
- 2 large eggs
- 1/2 cup pure maple syrup
- 3 cups old-fashioned whole oats
- 1 teaspoon baking powder
- 1 and 1/2 teaspoons cinnamon powder
- 1/4 teaspoon nutmeg powder
- 1/2 teaspoon vanilla essence
- 1/4 teaspoon salt
- 1 generous cup chopped peeled apple
- Optional: 1/2 cup chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.
- In a mixing bowl, whisk together the milk, eggs, maple syrup, and applesauce until well combined.
- In another bowl, mix together the oats, baking powder, cinnamon, nutmeg, vanilla essence, and salt.
- Gradually add the dry mixture to the wet ingredients and stir until just combined. Fold in the chopped apples.
- Spoon the mixture into the prepared muffin tin, filling each cup about three-quarters full.
- Bake for about 28 minutes or until golden brown and a toothpick comes out clean.
- Let cool slightly before removing from the tin.
