Ingredients
- 1 can chickpeas (15 oz), drained and rinsed
- 1 ripe mango, peeled and diced
- ½ red bell pepper, diced
- ¼ red onion, finely chopped
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tbsp olive oil
- Salt & pepper to taste
Instructions
- In a large mixing bowl, combine chickpeas, mango, bell pepper, onion, and cilantro.
- In a separate small bowl, whisk together lime juice, olive oil, salt, pepper, and optional chili flakes.
- Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
- Chill for about 10 minutes or serve immediately for maximum freshness.
