Instructions
- In a large mixing bowl, combine rolled oats, almond flour, and protein powder.
- In another bowl, blend cream cheese, Greek yogurt, honey (or maple syrup), vanilla extract, and salt until smooth.
- Gently fold in the blueberries while preserving their shape.
- Gradually mix the dry ingredients with the wet mixture until a dough-like consistency forms.
- Scoop out tablespoons of the mixture and roll them into small balls.
- Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Store leftovers in an airtight container in the fridge for up to one week or freeze for longer storage.
