- 4 stalks celery
- 2 cloves garlic
- 4 anchovy fillets (substitute with capers if desired)
- 3 tablespoons olive oil

- 1/2 cup freshly grated Parmesan cheese
- 1 teaspoon freshly cracked black pepper
- 2 wedges lemon
Instructions
- Wash the celery stalks thoroughly, trim tough ends, and slice them into thin diagonal pieces.
- Mince the garlic cloves finely. If using anchovy fillets, chop them; otherwise, rinse capers well.
- In a mixing bowl, combine sliced celery, minced garlic, chopped anchovies (or capers), olive oil, salt, black pepper, and juice from one lemon wedge. Toss until well mixed.
- Add freshly grated Parmesan cheese to the mixture and toss gently to combine. Serve immediately or chill for about 30 minutes to meld flavors.
