- 1/3 cup dairy-free milk (room temperature)
- 1/3 cup neutral flavored oil
- 1 tablespoon apple cider vinegar (or lemon juice, optional)
- 1 teaspoon vanilla extract
Instructions
- Combine chopped strawberries with sugar, lemon juice, and flour in a bowl. Set aside.
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Mix melted vegan butter, flour, sugar, and cinnamon in another bowl to create the crumb topping.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, mix dairy-free yogurt, milk, oil, vinegar (if using), and vanilla until smooth.
- Combine wet and dry ingredients gently; do not overmix.
- Pour half the batter into the pan, add half the strawberry filling on top, followed by the remaining batter and strawberries. Sprinkle with crumb topping.
- Bake for about 65 minutes until a toothpick comes out clean. Cool before serving.
