  • 4 1/2 tablespoons melted vegan butter
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose plain flour (spoon and leveled)
  • 3/4 cup granulated sugar
  • 2 1/4 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup dairy-free yogurt (or unsweetened applesauce, room temperature)
  • 1/3 cup dairy-free milk (room temperature)
  • 1/3 cup neutral flavored oil
  • 1 tablespoon apple cider vinegar (or lemon juice, optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Combine chopped strawberries with sugar, lemon juice, and flour in a bowl. Set aside.
  2. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  3. Mix melted vegan butter, flour, sugar, and cinnamon in another bowl to create the crumb topping.
  4. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  5. In a separate bowl, mix dairy-free yogurt, milk, oil, vinegar (if using), and vanilla until smooth.
  6. Combine wet and dry ingredients gently; do not overmix.
  7. Pour half the batter into the pan, add half the strawberry filling on top, followed by the remaining batter and strawberries. Sprinkle with crumb topping.
  8. Bake for about 65 minutes until a toothpick comes out clean. Cool before serving.
