- 1 1/2 cup almond flour
- 1/4 cup oat flour
- 1/3 cup melted refined coconut oil
- 1/4 cup pure maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup berries, fresh or frozen
- 1 1/2 tbsp pure maple syrup
- 1 tbsp water
- 1/2 tsp cornstarch
- 1/2 cup oat flour
- 1/4 cup oats
- 2 tbsp almond flour
- 1/4 cup melted refined coconut oil
- 1 tbsp pure maple syrup
- 1/2 tsp vanilla extract
- pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, oat flour, and salt. Stir in melted coconut oil, maple syrup, and vanilla extract until well blended. Transfer to a greased 8×8 baking dish and flatten evenly.
- In a pot over medium heat, cook berries with maple syrup and water until softened. Mash lightly and stir in cornstarch, simmering until thickened. Cool slightly before refrigerating.
- For the crumble topping, mix oats, oat flour, almond flour, melted coconut oil, maple syrup, vanilla extract, and salt until crumbly.
- Assemble by layering the berry mixture over the base layer and topping it with the crumble mixture. Bake for 25 minutes or until golden brown.
- Allow to cool completely before cutting into squares.
