  • 1 1/2 cup almond flour
  • 1/4 cup oat flour
  • 1/3 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, oat flour, and salt. Stir in melted coconut oil, maple syrup, and vanilla extract until well blended. Transfer to a greased 8×8 baking dish and flatten evenly.
  3. In a pot over medium heat, cook berries with maple syrup and water until softened. Mash lightly and stir in cornstarch, simmering until thickened. Cool slightly before refrigerating.
  4. For the crumble topping, mix oats, oat flour, almond flour, melted coconut oil, maple syrup, vanilla extract, and salt until crumbly.
  5. Assemble by layering the berry mixture over the base layer and topping it with the crumble mixture. Bake for 25 minutes or until golden brown.
  6. Allow to cool completely before cutting into squares.
