  • 190g graham crackers
  • 35g sugar
  • 75g melted unsalted butter
  • 32 oz full-fat cream cheese
  • 325g granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs
  • 120g heavy cream
  • 240g sour cream
  • 1 tbsp cornstarch
  • 1 lb strawberries
  • 2-3 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham crackers and sugar; stir in melted butter until mixed. Press into the bottom of a springform pan and bake for about 10 minutes. Let cool.
  2. Beat cream cheese until smooth, then mix in sugar and salt. Add vanilla essence and eggs one at a time. Mix in heavy cream, sour cream, and cornstarch until creamy.
  3. Pour filling over the crust and bake for 60-75 minutes until edges are set but center is slightly jiggly. Turn off oven; let cool inside with door ajar.
  4. For the compote, simmer strawberries with sugar, cornstarch, and lemon juice for about 5 minutes until thickened. Cool completely.
  5. Remove cheesecake from pan and top with the strawberry compote before serving.
