Ingredients
- 190g graham crackers
- 35g sugar
- 75g melted unsalted butter
- 32 oz full-fat cream cheese
- 325g granulated sugar
- ½ tsp salt
- 1 tsp vanilla essence
- 4 large eggs
- 120g heavy cream
- 240g sour cream
- 1 tbsp cornstarch
- 1 lb strawberries
- 2-3 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham crackers and sugar; stir in melted butter until mixed. Press into the bottom of a springform pan and bake for about 10 minutes. Let cool.
- Beat cream cheese until smooth, then mix in sugar and salt. Add vanilla essence and eggs one at a time. Mix in heavy cream, sour cream, and cornstarch until creamy.
- Pour filling over the crust and bake for 60-75 minutes until edges are set but center is slightly jiggly. Turn off oven; let cool inside with door ajar.
- For the compote, simmer strawberries with sugar, cornstarch, and lemon juice for about 5 minutes until thickened. Cool completely.
- Remove cheesecake from pan and top with the strawberry compote before serving.
