- 1/2 cup unsalted butter
- 3/4 cup light brown sugar
- 20-ounce can pineapple slices
- 12 maraschino cherries
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- Pinch of salt (optional)
- 1 large egg
- 1/2 cup buttermilk
- 1/3 cup sour cream or plain Greek yogurt
- 3 tablespoons canola or vegetable oil
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 350°F.
- Melt the butter in a microwave-safe bowl, then pour it into a greased springform cake pan. Sprinkle brown sugar over the butter.
- Arrange pineapple slices in the pan, placing cherries in the center of each slice.
- In a separate bowl, whisk together flour, granulated sugar, baking powder, and optional salt.
- In another bowl, mix buttermilk, sour cream, oil, egg, and vanilla until smooth.
- Combine wet and dry ingredients gently until just mixed; pour batter over toppings.
- Bake for about 40 minutes or until a toothpick comes out clean.
- Allow cooling before removing from the pan.
