  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar (divided)
  • 6 tbsp melted butter
  • 2 (8 oz) packages softened cream cheese
  • ½ cup granulated sugar
  • ¼ cup sour cream
  • ½ tsp vanilla extract
  • 2 room temperature eggs
  • 1 ½ cups chopped fresh strawberries
  • 5 tbsp sugar (for strawberries)
  • 3 tbsp water
  • 1 tbsp lemon juice
  • 2 tsp cornstarch

Instructions

  1. Preheat oven to 350°F. Line an 8×8 or 9×9 pan with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, ¼ cup sugar, and melted butter until combined. Press firmly into the bottom of the prepared pan.
  3. In a large bowl, use hand beaters to blend cream cheese, remaining sugar, sour cream, and vanilla until smooth. Add eggs one at a time on low speed until just mixed.
  4. Pour the filling over the crust and bake for about 25–35 minutes until slightly jiggly in the center. Cool at room temperature for 1–2 hours before refrigerating for at least 3–4 hours.
