Ingredients
- 2 large ripe mangos
- 1 English cucumber
- ½ red bell pepper
- 1 large carrot
- 2 green onions
- ¼ cup fresh cilantro leaves
- ¼ cup Thai basil leaves
- ¼ cup roasted peanuts
- Zest of 1 lime
- ¼ cup fresh lime juice
- ½ tsp freshly grated ginger
- 1 tbsp soy sauce
- 1 tbsp maple syrup (optional)
- ¼ tsp crushed red pepper flakes (optional)
Instructions
- Prepare the dressing by whisking together lime zest, lime juice, grated ginger, soy sauce, maple syrup (if using), and crushed red pepper flakes in a small bowl. Set aside.
- In a medium mixing bowl, combine sliced mangos, cucumber, bell pepper, carrot, green onions, cilantro, Thai basil, and peanuts. Toss gently to mix.
- Pour the dressing over the salad mixture and toss until everything is well coated.
- Serve immediately on a plate garnished with extra peanuts and Thai basil leaves.
