  • ¼ cup roasted peanuts
  • Zest of 1 lime
  • ¼ cup fresh lime juice
  • ½ tsp freshly grated ginger
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup (optional)
  • ¼ tsp crushed red pepper flakes (optional)

Instructions

  1. Prepare the dressing by whisking together lime zest, lime juice, grated ginger, soy sauce, maple syrup (if using), and crushed red pepper flakes in a small bowl. Set aside.
  2. In a medium mixing bowl, combine sliced mangos, cucumber, bell pepper, carrot, green onions, cilantro, Thai basil, and peanuts. Toss gently to mix.
  3. Pour the dressing over the salad mixture and toss until everything is well coated.
