Ingredients

  • 1 lb beef ribs (chopped into 1-inch pieces)
  • 1 lb daikon radish (chopped into chunks)
  • 1 inch ginger (thinly sliced)
  • 5 cloves garlic (peeled)
  • Water
  • 2 tsp salt (adjust to taste)
  • 1 tsp white pepper (adjust to taste)
  • Cilantro or scallions (for garnish)

Instructions

  1. In a large pot, add beef ribs and cover with cold water. Bring to a boil and blanch for 3–4 minutes. Drain and set aside.
  2. Return beef ribs to the pot, adding daikon, ginger, and garlic. Fill with approximately 2 liters of water.
  3. Bring to a boil again, then reduce heat and simmer for 45 minutes to an hour until beef is tender.
  4. Season with salt and white pepper to taste before serving.
  5. Garnish with cilantro or scallions.
