Ingredients

- 1 lb beef ribs (chopped into 1-inch pieces)
- 1 lb daikon radish (chopped into chunks)
- 1 inch ginger (thinly sliced)
- 5 cloves garlic (peeled)
- Water
- 2 tsp salt (adjust to taste)
- 1 tsp white pepper (adjust to taste)
- Cilantro or scallions (for garnish)
Instructions
- In a large pot, add beef ribs and cover with cold water. Bring to a boil and blanch for 3–4 minutes. Drain and set aside.
- Return beef ribs to the pot, adding daikon, ginger, and garlic. Fill with approximately 2 liters of water.
- Bring to a boil again, then reduce heat and simmer for 45 minutes to an hour until beef is tender.
- Season with salt and white pepper to taste before serving.
- Garnish with cilantro or scallions.
