  • 1 stick unsalted butter (softened)
  • 7.5 oz vegan marshmallow fluff
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 4 tbsp dairy-free heavy whipping cream

Instructions

  1. Preheat the oven to 350°F and prepare your bundt pan with non-stick spray.
  2. In a large bowl, mix together the strawberry cake mix, eggs, water, vegetable oil, and strawberry gelatin until smooth.
  3. Pour the batter into the bundt pan and bake for 35-40 minutes until a toothpick comes out clean.
  4. Cool in the pan for 10 minutes before transferring to a cooling rack; let cool completely.
  5. For the filling, beat together softened butter and marshmallow fluff until fluffy; mix in powdered sugar and vanilla extract. Gradually add in heavy whipping cream to achieve desired consistency.
