Ingredients
- 1 box strawberry cake mix
- 4 eggs
- 1 1/3 cup water
- 2/3 cup vegetable oil
- 3 oz box of strawberry gelatin (vegan)
- 1 stick unsalted butter (softened)
- 7.5 oz vegan marshmallow fluff
- 3 cups powdered sugar
- 1 tsp vanilla extract
- 4 tbsp dairy-free heavy whipping cream
Instructions
- Preheat the oven to 350°F and prepare your bundt pan with non-stick spray.
- In a large bowl, mix together the strawberry cake mix, eggs, water, vegetable oil, and strawberry gelatin until smooth.
- Pour the batter into the bundt pan and bake for 35-40 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a cooling rack; let cool completely.
- For the filling, beat together softened butter and marshmallow fluff until fluffy; mix in powdered sugar and vanilla extract. Gradually add in heavy whipping cream to achieve desired consistency.
- Once the cake is cool, scoop out holes from the bottom and fill them with cream using a piping bag.
- Dust with powdered sugar before serving.
