- 4 cups strawberries
- ½ cup water
- ¾ cup granulated sugar
- 4 tablespoons lemon juice
- 1 ½ cups heavy cream
- 16 oz mascarpone cheese
- ¾ cup granulated sugar
- 2 teaspoons vanilla extract
- 260 g ladyfingers
- Freeze-dried strawberries (for dusting)
Instructions
- Prepare the strawberry syrup by cooking strawberries with water, mashing them, and straining to remove pulp. Combine the juice with sugar and lemon juice, simmer until thickened.
- For the mascarpone filling, whisk mascarpone cheese with sugar and vanilla until smooth. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture along with cooled strawberry syrup.
- Assemble by dipping ladyfingers in syrup and layering them with the mascarpone filling. Refrigerate for at least six hours or overnight.
- Before serving, dust with freeze-dried strawberry powder and garnish with a fresh strawberry slice.
