- 1 cup chopped strawberries
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 1 egg
- 1 tbsp milk
- 1/2 cup chopped strawberries (for topping)
- 1 tbsp white sugar (for topping)
- 1 tbsp milk (+1/2 tbsp if needed)
- 1 cup powdered sugar
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- In another bowl, mix buttermilk, vanilla extract, and egg. Gradually add to dry ingredients and stir until just combined; fold in strawberries.
- Turn dough onto a floured surface, shape into an 8-inch circle, wrap in plastic wrap, and freeze for 30 minutes.
- Cut chilled dough into triangles and place on the prepared sheet. Brush with milk.
- Bake for 13-15 minutes or until golden brown. Cool on a wire rack before glazing.
