  • 1 cup chopped strawberries
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1 egg
  • 1 tbsp milk
  • 1/2 cup chopped strawberries (for topping)
  • 1 tbsp white sugar (for topping)
  • 1 tbsp milk (+1/2 tbsp if needed)
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. In another bowl, mix buttermilk, vanilla extract, and egg. Gradually add to dry ingredients and stir until just combined; fold in strawberries.
  5. Turn dough onto a floured surface, shape into an 8-inch circle, wrap in plastic wrap, and freeze for 30 minutes.
  6. Cut chilled dough into triangles and place on the prepared sheet. Brush with milk.
  7. Bake for 13-15 minutes or until golden brown. Cool on a wire rack before glazing.
