These quick and easy strawberry yogurt parfaits are layered with creamy yogurt, fresh strawberries, sweet fruit compote, and crunchy granola. Light, refreshing, and full of texture, they make a perfect breakfast, snack, or simple dessert.

Ingredients

For the Parfait Base:
1 1/3 cups dairy-free yogurt (or cashew cream)
3 tablespoons icing sugar (or powdered erythritol)

For the Fruit Layers:
1 1/2 cups fresh strawberries, sliced
1/2 cup strawberry compote (or 1/4 cup jam)

For the Crunchy Layer:
1 1/2 cups granola

Instructions

  • In a bowl, mix the dairy-free yogurt with the icing sugar until smooth and slightly sweetened.
  • Prepare the strawberries by washing and slicing them evenly.
  • In serving glasses or jars, start by adding a layer of yogurt mixture at the bottom.
  • Add a layer of sliced strawberries followed by a spoonful of strawberry compote.
  • Sprinkle a layer of granola over the fruit.
  • Repeat the layers until the glasses are filled, finishing with strawberries and a sprinkle of granola on top.
  • Serve immediately for maximum crunch, or chill briefly if desired.
