Ingredients
- ¼ cup melted coconut oil
- ½ cup cane sugar (divided)
- 1 large egg
- ½ cup all-purpose flour
- ½ cup oat flour
- 1 ½ cups rolled oats
- 1 pound diced strawberries
- 1 tablespoon lemon juice
- ¼ teaspoon cinnamon
- ¼ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine melted coconut oil and ¼ cup of cane sugar until smooth. Beat in the egg.
- Mix in both flours, cinnamon, salt, and rolled oats until well combined.
- In another bowl, toss diced strawberries with remaining cane sugar and lemon juice; let sit for 10 minutes before adding oat flour to thicken.
- Spread half of the oat mixture into a greased baking pan. Pour strawberry filling on top and sprinkle remaining oat mixture over it.
- Bake for about 45 minutes until golden brown on top. Cool completely before cutting into squares.
