  • ¼ cup melted coconut oil
  • ½ cup cane sugar (divided)
  • 1 large egg
  • ½ cup all-purpose flour
  • ½ cup oat flour
  • 1 ½ cups rolled oats
  • 1 pound diced strawberries
  • 1 tablespoon lemon juice
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine melted coconut oil and ¼ cup of cane sugar until smooth. Beat in the egg.
  3. Mix in both flours, cinnamon, salt, and rolled oats until well combined.
  4. In another bowl, toss diced strawberries with remaining cane sugar and lemon juice; let sit for 10 minutes before adding oat flour to thicken.
  5. Spread half of the oat mixture into a greased baking pan. Pour strawberry filling on top and sprinkle remaining oat mixture over it.
  6. Bake for about 45 minutes until golden brown on top. Cool completely before cutting into squares.
