For the Strawberry Lemonade Concentrate:
6 cups strawberries, cleaned and tops removed
4 cups lemon juice (bottled, fresh, or a combination)
6 cups granulated sugar
Instructions
- In a large pot, combine the strawberries and lemon juice.
- Bring the mixture to a gentle boil over medium heat, stirring occasionally.
- Reduce heat and simmer for 10–15 minutes, allowing the strawberries to soften and release their juices.
- Mash the strawberries thoroughly to extract as much flavor as possible.
- Strain the mixture through a fine-mesh sieve or cheesecloth to remove solids, pressing gently to extract the liquid.
- Return the strained liquid to the pot and add the sugar.
- Heat over medium heat, stirring constantly until the sugar is completely dissolved.
- Bring the mixture to a gentle boil for 1–2 minutes.
- Carefully pour the hot concentrate into sterilized jars, leaving a small headspace. Seal tightly.
- Allow jars to cool completely before storing in a cool, dark place.
