4 cups lemon juice (bottled, fresh, or a combination)
6 cups granulated sugar

Instructions

  • In a large pot, combine the strawberries and lemon juice.
  • Bring the mixture to a gentle boil over medium heat, stirring occasionally.
  • Reduce heat and simmer for 10–15 minutes, allowing the strawberries to soften and release their juices.
  • Mash the strawberries thoroughly to extract as much flavor as possible.
  • Strain the mixture through a fine-mesh sieve or cheesecloth to remove solids, pressing gently to extract the liquid.
  • Return the strained liquid to the pot and add the sugar.
  • Heat over medium heat, stirring constantly until the sugar is completely dissolved.
  • Bring the mixture to a gentle boil for 1–2 minutes.
  • Carefully pour the hot concentrate into sterilized jars, leaving a small headspace. Seal tightly.
  • Allow jars to cool completely before storing in a cool, dark place.
