- 1 1/2 cups All-Purpose Flour (or gluten-free blend)
- 2 cups Old-Fashioned Oats
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Ground Cinnamon (optional)
- 1/4 teaspoon Salt
- 1/2 cup Freeze-Dried Strawberries (for icing)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together butter and sugars until fluffy, then add egg and vanilla.
- In another bowl, mix flour, baking soda, cinnamon, and salt, then combine with wet ingredients.
- Stir in oats until evenly mixed.
- Drop rounded tablespoons of dough onto baking sheets, leaving space between cookies.
- Bake for 12 minutes until golden on edges. Let cool.
- For icing, crush freeze-dried strawberries and mix with powdered sugar and water until smooth.
- Drizzle or spread icing over cooled cookies.
