Ingredients
- 5 tablespoons melted butter
- 1½ cups graham cracker crumbs
- 16 ounces softened cream cheese
- ¾ cup powdered sugar
- 10 sliced strawberries
- 1 cup cold whipping cream
- 3 tablespoons plant-based gelling agent (vegan gelatin)
- 8 ounces Cool Whip
- 3 tablespoons sugar
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 2 teaspoons lemon juice
Instructions
- In a mixing bowl, combine melted butter, graham cracker crumbs, sugar, and almond extract until well mixed. Press into the bottom of a 9×9 inch baking dish.
- Beat softened cream cheese until smooth in another bowl. Gradually add powdered sugar, vanilla extract, and lemon juice; mix until combined.
- Whip the chilled cream until stiff peaks form and gently fold it into the cream cheese mixture.
- Layer sliced strawberries over the crust, then pour the cream cheese filling on top.
- Prepare the vegan gelatin according to package instructions and pour over the filling once cooled slightly. Top with Cool Whip.
- Refrigerate for at least 2 hours before serving.
