  • 5 tablespoons melted butter
  • 1½ cups graham cracker crumbs
  • 16 ounces softened cream cheese
  • ¾ cup powdered sugar
  • 10 sliced strawberries
  • 1 cup cold whipping cream
  • 3 tablespoons plant-based gelling agent (vegan gelatin)
  • 8 ounces Cool Whip
  • 3 tablespoons sugar
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice

Instructions

  1. In a mixing bowl, combine melted butter, graham cracker crumbs, sugar, and almond extract until well mixed. Press into the bottom of a 9×9 inch baking dish.
  2. Beat softened cream cheese until smooth in another bowl. Gradually add powdered sugar, vanilla extract, and lemon juice; mix until combined.
  3. Whip the chilled cream until stiff peaks form and gently fold it into the cream cheese mixture.
  4. Layer sliced strawberries over the crust, then pour the cream cheese filling on top.
  5. Prepare the vegan gelatin according to package instructions and pour over the filling once cooled slightly. Top with Cool Whip.
