- 1 cup all-purpose flour (for crust)
- 1/2 cup cold unsalted butter
- 1 pound fresh strawberries (diced)
- 2 large eggs
- 1 cup granulated sugar (divided use)
- 1/2 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1/3 cup all-purpose flour (for custard)
- Whipped topping (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine 1 cup flour, 2 tablespoons sugar, and salt. Cut in cold butter until crumbly. Press into the bottom of a greased 9×9 inch baking dish and bake for 15 minutes until golden.
- For the custard, whisk together eggs, remaining sugar, and vanilla in another bowl. Stir in heavy cream and fold in diced strawberries. Add flour and mix gently.
- Pour the custard over the baked crust and bake for an additional 40-45 minutes until set.
- Cool completely before topping with whipped topping and garnishing with whole strawberries.
