- 16 oz cream cheese
- ½ cup granulated sugar
- 1 tsp vanilla extract
- ½ cup sour cream
- 2 large eggs
- ½ cup strawberry puree or jam
- 1 ½ cups crushed graham crackers or golden Oreos
- ¼ cup unsalted butter (for crust)
- 1 cup crushed golden Oreos or vanilla wafers
- ½ cup freeze-dried strawberries
Instructions
- Preheat your oven to 325°F (163°C) and line a mini muffin tin or an 8×8-inch pan with parchment paper.
- Combine crushed graham crackers with melted butter and press into the bottom of the prepared pan.
- In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time while mixing steadily, then stir in sour cream, vanilla extract, and strawberry puree until well combined.
- Pour the cheesecake mixture over the crust and bake: for mini bites, 20–25 minutes; for the larger pan, 35–40 minutes until set but slightly jiggly in the center.
- Allow to cool to room temperature before refrigerating for at least four hours.
- For topping, mix crushed Oreos with freeze-dried strawberries and melted butter, then sprinkle over chilled cheesecake bites before serving.
