- 4 oz cream cheese
- 2 cups all-purpose flour
- 1 ¼ cups fresh strawberries (diced)
- 2 large eggs
- ½ cup milk
- ⅔ cup granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 large egg yolk
- ½ tsp vanilla extract
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 tbsp flour (for tossing strawberries)
- ⅓ cup all-purpose flour (for crumb topping)
- 3 tbsp granulated sugar (for crumb topping)
- 3 tbsp unsalted butter (for crumb topping)
Instructions
- Preheat oven to 375°F (190°C) and prepare a muffin tin.
- In a bowl, mix cream cheese, granulated sugar, egg yolk, and vanilla until smooth for the filling.
- In another bowl, combine flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together eggs, milk, vegetable oil, and vanilla.
- Combine wet and dry ingredients gently; do not overmix.
- Toss diced strawberries in flour and fold into the batter.
- Fill muffin cups halfway with batter, add cream cheese filling on top, then cover with remaining batter.
- If desired, mix crumb topping ingredients and sprinkle on muffins.
- Bake for 18–22 minutes until golden brown.
