  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries (chopped)
  • ¼ cup granulated sugar (for filling)
  • 8 oz semi-sweet chocolate (for ganache)
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt. Add eggs, milk, vegetable oil, and vanilla; mix well.
  3. Gradually stir in boiling water until smooth.
  4. Divide batter into two greased round cake pans and bake for about 30 minutes or until a toothpick comes out clean.
  5. For the strawberry filling, cook chopped strawberries with sugar until dissolved, then add lemon juice and cornstarch mixture; let cool.
  6. To prepare ganache, heat heavy cream until boiling and pour over chopped chocolate; stir until smooth.
  7. Assemble the cake by layering chocolate cakes with strawberry filling in between and topping with ganache.
