Ingredients
- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 2 cups fresh strawberries (chopped)
- ¼ cup granulated sugar (for filling)
- 8 oz semi-sweet chocolate (for ganache)
- 1 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt. Add eggs, milk, vegetable oil, and vanilla; mix well.
- Gradually stir in boiling water until smooth.
- Divide batter into two greased round cake pans and bake for about 30 minutes or until a toothpick comes out clean.
- For the strawberry filling, cook chopped strawberries with sugar until dissolved, then add lemon juice and cornstarch mixture; let cool.
- To prepare ganache, heat heavy cream until boiling and pour over chopped chocolate; stir until smooth.
- Assemble the cake by layering chocolate cakes with strawberry filling in between and topping with ganache.
