Ingredients
- ¾ cup granulated sugar
- 1 ⅓ cup all-purpose flour
- 1 tsp baking powder
- ⅓ tsp baking soda
- ¼ tsp salt
- 2 eggs
- ½ cup vegetable oil
- 3 tbsp sour cream
- 3 tbsp milk
- 1 tsp vanilla extract
- ½ cup sparkling grape juice
- 5 egg whites
- 10 oz granulated sugar (for frosting)
- 15 oz cold butter (for frosting)
- ½ cup strawberry puree
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix sugar, flour, baking powder, baking soda, and salt.
- In another bowl, whisk eggs, oil, sour cream, milk, vanilla extract, and sparkling grape juice until smooth.
- Combine wet and dry ingredients until just mixed.
- Divide batter between greased 9-inch round cake pans and bake for 30–35 minutes or until a toothpick comes out clean.
- Allow cakes to cool before preparing the strawberry buttercream by whipping egg whites with sugar over simmering water until warm; then whip until stiff peaks form and gradually add cold butter and strawberry puree.
- Assemble the cake by layering cooled cakes with frosting in between and covering the entire cake with remaining frosting.
