Ingredients

  • ¾ cup granulated sugar
  • 1 ⅓ cup all-purpose flour
  • 1 tsp baking powder
  • ⅓ tsp baking soda
  • ¼ tsp salt
  • 2 eggs
  • ½ cup vegetable oil
  • 3 tbsp sour cream
  • 3 tbsp milk
  • 1 tsp vanilla extract
  • ½ cup sparkling grape juice
  • 5 egg whites
  • 10 oz granulated sugar (for frosting)
  • 15 oz cold butter (for frosting)
  • ½ cup strawberry puree

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix sugar, flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, oil, sour cream, milk, vanilla extract, and sparkling grape juice until smooth.
  4. Combine wet and dry ingredients until just mixed.
  5. Divide batter between greased 9-inch round cake pans and bake for 30–35 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool before preparing the strawberry buttercream by whipping egg whites with sugar over simmering water until warm; then whip until stiff peaks form and gradually add cold butter and strawberry puree.
  7. Assemble the cake by layering cooled cakes with frosting in between and covering the entire cake with remaining frosting.
