  • ⅓ cup brown sugar
  • 1 cup mashed bananas (about 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a deep baking dish by spraying it with nonstick spray.
  2. In a large mixing bowl, cream together granulated sugar, brown sugar, and butter until light and fluffy. Add in eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas; mix well.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually combine the dry ingredients with the wet mixture until just blended.
  5. Pour batter into the prepared dish and bake for 45-55 minutes. Test doneness with a toothpick—it should come out clean.
  6. While baking, prepare the toffee sauce in a saucepan by melting butter and brown sugar over medium-low heat. Stir in cream and vanilla; simmer until smooth.
  7. Once the cake is baked and slightly cooled, poke holes in the top and pour the toffee sauce over it to soak for at least an hour before serving.
