- 3-4 tbsp fresh lime juice
- 1 tbsp lime zest
- 2 cloves garlic
- 1 tsp maple syrup
- 1 tsp ground cumin
- 1/2 tsp red pepper flakes
- 1/4 tsp salt
- black pepper to taste
- 2 ripe Ataulfo mangoes
- 1 can black beans (15-19 oz)
- 1 red bell pepper
- 1/2 red onion
- 1 jalapeño
- 1/2 cup fresh cilantro
- avocado (optional for serving)
Instructions
- In a large mixing bowl, combine olive oil, lime juice, lime zest, garlic, maple syrup, cumin, red pepper flakes, salt, and black pepper. Whisk until well blended.
- Add diced mangoes, black beans, red bell pepper, red onion, jalapeño, and cilantro to the bowl. Gently toss until everything is well coated in dressing.
- If time allows, refrigerate for 30–60 minutes to enhance flavor melding. Serve fresh and enjoy.
