  • pounds boneless, skinless chicken breasts or thighs
  • 1 tablespoon + ⅓ cup tamari or soy sauce (divided)
  • 2 tablespoons extra virgin olive oil
  • ¼ cup honey
  • 2-3 tablespoons chili paste
  • 1 tablespoon fresh ginger, chopped
  • 2 cloves garlic, chopped
  • Cooked rice for serving
  • Sliced cucumber for garnish
  • Sliced avocado for garnish

Instructions

  1. In a mixing bowl, combine 1 tablespoon tamari/soy sauce, orange juice, honey, chili paste, chopped ginger, garlic, black pepper, and the remaining tamari/soy sauce. Add chicken and marinate for at least 15 minutes.
  2. Heat olive oil in a skillet over medium heat. Cook marinated chicken for about 6-7 minutes on each side until fully cooked (internal temperature should reach 165°F). Let rest before slicing.
  3. For Yum Yum Sauce: Mix olive oil mayo, ketchup, coconut aminos (or Worcestershire), seasoned salt, and cayenne pepper in a small bowl until smooth.
