- 3 cups fresh raspberries

- 1 cup cold heavy cream
- 5 tablespoons powdered sugar
Instructions
- Prepare the raspberry base by mixing fresh raspberries, lemon juice, granulated sugar, and vanilla extract in a bowl. Mash gently until slightly broken down but still chunky.
- In another bowl, combine cold mascarpone, heavy cream, and powdered sugar. Use an electric mixer on medium speed to whip until soft peaks form; add vanilla extract and mix well.
- Gently fold half the raspberry mixture into the whipped mascarpone until you see swirls of raspberry.
- Spoon into serving glasses and top with remaining raspberry mixture before serving.
