- 2 tbsp Olive or Sesame Oil
- 2 cloves Garlic (minced)
- 1/2 cup Soy Sauce
- 1/3 cup Pineapple Juice
- 2 tbsp Honey or Brown Sugar
- 1 tbsp Rice Vinegar
- 1.5 cups Cooked Rice
- 1 cup Pineapple Chunks
- 1/2 piece Red Bell Pepper (diced)
- 1/4 cup Green Onions (chopped)
Instructions
- Prepare all ingredients by chopping vegetables and measuring liquids.
- Heat oil in a skillet over medium-high heat until shimmering.
- Sauté minced garlic briefly until fragrant, then add chicken pieces, browning them for about 5-7 minutes.
- Whisk together soy sauce, pineapple juice, honey or brown sugar, rice vinegar, and cornstarch mixture; pour over chicken.
- Stir in pineapple chunks, diced red bell pepper, and cooked rice until well coated.
- Reduce heat and let simmer for about 5-10 minutes until heated through.
- Serve topped with chopped green onions and sesame seeds.
