Ingredients
Chicken & Rice
1 lb chicken breast, cubed
1 cup pineapple chunks (fresh, canned, or frozen)
1 tbsp olive oil
Vegetables & Aromatics
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
Rice & Broth
1 cup jasmine rice
2 cups chicken broth
Seasoning & Garnish
1 tbsp soy sauce
1 tsp grated ginger (or 1 tsp ground ginger)
Salt and pepper, to taste
1/4 cup green onions, sliced
1 tbsp sesame seeds
Instructions
. Cook the Chicken
Heat olive oil in a large skillet or pot over medium heat. Add the cubed chicken and cook for about 5–6 minutes until lightly browned.
2. Sauté the Vegetables
Add the chopped onion, garlic, and diced red bell pepper. Cook for 3–4 minutes until the vegetables soften and become fragrant.
3. Add Rice and Liquid
Stir in the jasmine rice, pineapple chunks, chicken broth, soy sauce, and ginger. Mix well to combine all the flavors.
4. Simmer the Rice
Bring the mixture to a gentle boil, then reduce heat to low. Cover and let simmer for about 15–18 minutes, or until the rice is tender and the liquid is absorbed.
5. Finish and Garnish
Season with salt and pepper to taste. Fluff the rice with a fork, then sprinkle with sliced green onions and sesame seeds before serving.
