  • 1 (8-ounce) can crushed pineapple (drained)

  • 3 cups grated carrots
  • 3/4 cup chopped walnuts
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, ground cinnamon, ground ginger, ground nutmeg, and salt.
  3. In another bowl, combine canola oil, eggs, light brown sugar, granulated sugar, crushed pineapple, and vanilla extract until smooth.
  4. Fold in grated carrots and chopped walnuts.
  5. Gradually mix the wet ingredients into the dry ingredients until just combined.
  6. Pour the batter into the prepared pan and bake for about 40 minutes or until a toothpick comes out clean.
