- 2 cups all-purpose flour

- 3/4 cup canola oil
- 4 large eggs
- 1 and 1/2 cups packed light brown sugar
- 1/2 cup granulated sugar
- 1 (8-ounce) can crushed pineapple (drained)
- 1 teaspoon pure vanilla extract
- 3 cups grated carrots
- 3/4 cup chopped walnuts
- 1/2 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a mixing bowl, whisk together flour, baking powder, baking soda, ground cinnamon, ground ginger, ground nutmeg, and salt.
- In another bowl, combine canola oil, eggs, light brown sugar, granulated sugar, crushed pineapple, and vanilla extract until smooth.
- Fold in grated carrots and chopped walnuts.
- Gradually mix the wet ingredients into the dry ingredients until just combined.
- Pour the batter into the prepared pan and bake for about 40 minutes or until a toothpick comes out clean.
- Allow the cake to cool completely before frosting with cream cheese frosting.
