- 4 boneless, skinless chicken breasts
- 2 ripe but firm pears, diced
- 4 oz crumbled Gorgonzola cheese
- 2 cups fresh spinach, chopped
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine diced pears, crumbled Gorgonzola cheese, chopped spinach, minced garlic, salt, and pepper.
- Slice open each chicken breast to create a pocket and stuff with the pear mixture.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken for 4-5 minutes per side until golden brown.
- Transfer the skillet to the oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
- Let rest before serving; drizzle with balsamic vinegar if desired.
