Ingredients
- 6 cups strawberry tops
- 4 cups sugar
- 4 cups water
Instructions
- Thoroughly wash the strawberry tops.
- Remove the tops from the strawberries and set aside for this recipe; use the strawberries as desired.
- In a small pot, add the strawberry tops and cover with water.
- Stir in the sugar, maintaining a 1:1 ratio with water.
- Boil the mixture, then reduce to a simmer for 10-15 minutes until the water turns red and the tops fade in color.
- Strain the liquid into another container, pressing down on the solids to extract maximum flavor.
- Return the juice to the pot and boil until reduced by about 1/4 and slightly thickened.
- Allow to cool before transferring to a jar for storage in the refrigerator.
