Ingredients

  • 6 cups strawberry tops
  • 4 cups sugar
  • 4 cups water

Instructions

  1. Thoroughly wash the strawberry tops.
  2. Remove the tops from the strawberries and set aside for this recipe; use the strawberries as desired.
  3. In a small pot, add the strawberry tops and cover with water.
  4. Stir in the sugar, maintaining a 1:1 ratio with water.
  5. Boil the mixture, then reduce to a simmer for 10-15 minutes until the water turns red and the tops fade in color.
  6. Strain the liquid into another container, pressing down on the solids to extract maximum flavor.
  7. Return the juice to the pot and boil until reduced by about 1/4 and slightly thickened.
  8. Allow to cool before transferring to a jar for storage in the refrigerator.
