  • ½ cup honey
  • ⅓ cup all-natural, creamy peanut butter
  • ⅓ cup chopped peanuts
  • 6 oz dark chocolate (chopped)
  • 2 teaspoons coconut oil
  • ½ cup all-natural, creamy peanut butter (for the top layer)
  • 1 teaspoon coconut oil (for the top layer)
  • ¼ cup mini chocolate chips (for topping)

Instructions

  1. Line a muffin pan with paper liners or use silicone pans.
  2. In a bowl, mix oats, honey, peanut butter, and chopped peanuts until well combined. If needed, add water to moisten.
  3. Press about 2 tablespoons of the mixture into each muffin cup.
  4. In another bowl, melt dark chocolate and coconut oil in the microwave in short increments until smooth.
  5. Pour melted chocolate over each oat layer and freeze for about 5 minutes.
  6. Mix the top layer ingredients and spoon onto the chocolate layer; sprinkle mini chocolate chips on top.
