Ingredients
- 2 cups quick-cooking oats
- ½ cup honey
- ⅓ cup all-natural, creamy peanut butter
- ⅓ cup chopped peanuts
- 6 oz dark chocolate (chopped)
- 2 teaspoons coconut oil
- ½ cup all-natural, creamy peanut butter (for the top layer)
- 1 teaspoon coconut oil (for the top layer)
- ¼ cup mini chocolate chips (for topping)
Instructions
- Line a muffin pan with paper liners or use silicone pans.
- In a bowl, mix oats, honey, peanut butter, and chopped peanuts until well combined. If needed, add water to moisten.
- Press about 2 tablespoons of the mixture into each muffin cup.
- In another bowl, melt dark chocolate and coconut oil in the microwave in short increments until smooth.
- Pour melted chocolate over each oat layer and freeze for about 5 minutes.
- Mix the top layer ingredients and spoon onto the chocolate layer; sprinkle mini chocolate chips on top.
- Freeze for at least 30 minutes until set and enjoy!
