  • 2 boxes white cake mix (plus ingredients as per package)
  • 1 box lime jello
  • 1 cup shredded coconut
  • 1 teaspoon coconut extract
  • 1 tub key lime frosting
  • Green sprinkles
  • Toasted coconut for garnish
  • Zest of 2 limes

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a mini bundt cake pan with non-stick cooking spray.
  2. Prepare cake mixes according to package instructions.
  3. Divide batter into two bowls; add shredded coconut and coconut extract to one bowl, and mix in lime jello to the other.
  4. Fill each cake well with 1/3 cup coconut batter, followed by 1/4 cup lime batter.
  5. Bake for about 22 minutes or until a toothpick comes out clean.
  6. Let cool for 20 minutes before transferring to a wire rack.
