Ingredients
- 4-5 medium ripe tomatoes
- 1 medium red onion
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup (optional)
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh basil or 1 tablespoon dried oregano
- 1 tablespoon capers (optional)
Instructions
- 1. Wash the tomatoes and slice them into rounds or wedges. Thinly slice the red onion into half-moons.
- 2. In a mixing bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey or maple syrup (if using), salt, and pepper until well combined.
- 3. In a large bowl, combine the sliced tomatoes and onions. Pour the vinaigrette over the top and toss gently to coat.
- 4. Add chopped fresh basil or dried oregano and capers if desired; toss again.
- 5. Let the salad marinate for at least 30 minutes before serving for optimal flavor.
