Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup softened butter
- 1/4 cup sugar
- 1 cup dark brown sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 2 large apples (chopped finely)
- 2 Tbsp brown sugar
- 1 Tbsp butter
- 1/4 cup pure maple syrup
- 1/2 cup powdered sugar
- 1/4 tsp vanilla extract
- 1/8 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Line an 11×7 inch baking pan with parchment paper or spray it with cooking spray for easy removal later.
- In a mixing bowl, combine the flour, baking powder, and salt. Stir well to mix.
- In another bowl, cream together softened butter, sugar, and dark brown sugar until smooth.
- Beat in eggs one at a time, then add vanilla extract and cinnamon. Mix until combined.
- Gradually add dry ingredients to the wet mixture until just combined.
- Fold in chopped apples gently until evenly distributed throughout the batter.
- Pour the batter into your prepared baking pan. Smooth out the top using a spatula. Bake for about 25 minutes or until a toothpick inserted into the center comes out clean.
- In a small saucepan over low heat, melt butter for the icing.
- Stir in brown sugar and maple syrup until smooth.
- Remove from heat and whisk in powdered sugar, vanilla extract, and ground cinnamon until creamy.
- Once blondies are baked and cooled slightly, drizzle warm maple icing over the top. Allow icing to set before slicing into squares or bars.
