  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup softened butter
  • 1/4 cup sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 large apples (chopped finely)
  • 2 Tbsp brown sugar
  • 1 Tbsp butter
  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 1/8 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 11×7 inch baking pan with parchment paper or spray it with cooking spray for easy removal later.
  2. In a mixing bowl, combine the flour, baking powder, and salt. Stir well to mix.
  3. In another bowl, cream together softened butter, sugar, and dark brown sugar until smooth.
  4. Beat in eggs one at a time, then add vanilla extract and cinnamon. Mix until combined.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Fold in chopped apples gently until evenly distributed throughout the batter.
  7. Pour the batter into your prepared baking pan. Smooth out the top using a spatula. Bake for about 25 minutes or until a toothpick inserted into the center comes out clean.
  8. In a small saucepan over low heat, melt butter for the icing.
  9. Stir in brown sugar and maple syrup until smooth.
  10. Remove from heat and whisk in powdered sugar, vanilla extract, and ground cinnamon until creamy.
  11. Once blondies are baked and cooled slightly, drizzle warm maple icing over the top. Allow icing to set before slicing into squares or bars.
