Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Separate the egg yolks from the whites into two bowls.
- Blend cottage cheese until smooth, then mix with egg yolks, cornstarch, vanilla extract, lemon zest, and optional sweetener.
- Beat egg whites with cream of tartar until stiff peaks form.
- Gently fold egg whites into the cottage cheese mixture without deflating them.
- Fold in fresh blueberries carefully.
- Spoon mounds of batter onto the baking sheet, spacing them apart.
- Bake for 25-30 minutes until golden brown and firm to touch.
- Let cool on a wire rack before serving.
