Instructions
- In a large bowl, whisk together the eggs, milk, and salt until well combined.
- Heat butter in a non-stick skillet over medium heat. Sauté onion, bell peppers, mushrooms, and a pinch of salt until softened.
- Add chopped tomatoes and turkey bacon; mix well.
- Pour in the egg mixture and gently scramble with a spatula until cooked to your desired consistency.
- Top with shredded cheddar cheese and garnish with chopped chives before serving.
