Ingredients

  • 1 bunch (10 oz) spinach (ends trimmed)
  • 1 clove garlic (finely minced)
  • 1 stalk green onion (chopped)
  • 2 teaspoons soy sauce
  • 1/8 teaspoon salt
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons toasted sesame seeds

Instructions

  1. Trim the ends of the spinach and cut it into 2-inch pieces.
  2. Bring a large pot of salted water to boil. Add the spinach and blanch for 30 seconds until wilted.
  3. Transfer the spinach to an ice bath immediately to cool down and retain its color. Squeeze out excess water gently.
  4. In a mixing bowl, combine the cooled spinach with minced garlic, green onion, soy sauce, salt, toasted sesame oil, and toasted sesame seeds. Mix well to combine.
  5. Serve warm or chilled as a delicious side dish.
