- 1 and 1/4 cups all purpose flour

- 1/2 cup granulated sugar
- 2 teaspoons fresh lime zest
- 2 1/2 tablespoons coconut oil, melted
- 1 large egg, at room temperature
- 1/2 cup coconut milk
- 1 cup confectioners' sugar
- 1 and 1/2 tablespoons key lime juice
- 1 teaspoon lime zest
- 1/8 teaspoon salt
- 1/2 cup shredded coconut, toasted
- 2 teaspoons lime zest
Instructions
- Preheat the oven to 350°F (175°C) and grease the donut pan with coconut oil.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, mix sugar, lime zest, and melted coconut oil until combined. Add the egg and coconut milk; mix until smooth.
- Combine dry ingredients with wet ingredients gently until just mixed.
- Fill the donut pan three-quarters full with batter and bake for about 10 minutes or until golden brown.
- Cool slightly before glazing with a mixture of confectioners' sugar, key lime juice, lime zest, and salt. Top with toasted shredded coconut.
