  • 1/8 teaspoon salt
  • 1/2 cup shredded coconut, toasted
  • 2 teaspoons lime zest

Instructions

  1. Preheat the oven to 350°F (175°C) and grease the donut pan with coconut oil.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, mix sugar, lime zest, and melted coconut oil until combined. Add the egg and coconut milk; mix until smooth.
  4. Combine dry ingredients with wet ingredients gently until just mixed.
  5. Fill the donut pan three-quarters full with batter and bake for about 10 minutes or until golden brown.
  6. Cool slightly before glazing with a mixture of confectioners' sugar, key lime juice, lime zest, and salt. Top with toasted shredded coconut.
