Ingredients

  • 12 oz fresh raspberries
  • 2 large fresh mangoes, cubed
  • 1 lb fresh strawberries, cubed
  • 1 lb green grapes, halved
  • 1 lb red grapes, halved
  • 4 cups apple juice
  • 4 pockets unflavored vegan gelatin
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Wash all fruits thoroughly and prepare them (cube mangoes, halve grapes, cube strawberries).
  2. Lightly spray a bundt pan with pan spray and wipe off excess.
  3. In a medium bowl, sprinkle vegan gelatin over 1 cup of apple juice and set aside.
  4. In a small saucepan, boil the remaining apple juice with sugar and lemon juice. Pour over the gelatin mixture and whisk until dissolved. Let cool.
  5. Layer the fruits in the bundt pan: start with raspberries, followed by mangoes, strawberries, green grapes, and red grapes.
  6. Carefully pour the cooled gelatin mixture over the fruits until they are completely covered.
  7. Refrigerate for 3-4 hours or until set before unmolding.
