- 12 oz fresh raspberries
- 2 large fresh mangoes, cubed
- 1 lb fresh strawberries, cubed
- 1 lb green grapes, halved
- 1 lb red grapes, halved
- 4 cups apple juice
- 4 pockets unflavored vegan gelatin
- 3 tablespoons granulated sugar
- 1 tablespoon lemon juice
Instructions
- Wash all fruits thoroughly and prepare them (cube mangoes, halve grapes, cube strawberries).
- Lightly spray a bundt pan with pan spray and wipe off excess.
- In a medium bowl, sprinkle vegan gelatin over 1 cup of apple juice and set aside.
- In a small saucepan, boil the remaining apple juice with sugar and lemon juice. Pour over the gelatin mixture and whisk until dissolved. Let cool.
- Layer the fruits in the bundt pan: start with raspberries, followed by mangoes, strawberries, green grapes, and red grapes.
- Carefully pour the cooled gelatin mixture over the fruits until they are completely covered.
- Refrigerate for 3-4 hours or until set before unmolding.
