  • 1 bunch fresh spinach (washed and trimmed)
  • 2 tablespoons sesame seeds
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 1 clove garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • Salt (to taste)

Instructions

  1. Blanch the spinach in boiling water for about 1 minute. Transfer immediately to ice water to stop cooking. Drain and squeeze out excess water.
  2. In a dry skillet over medium heat, toast sesame seeds until golden and fragrant. Remove from heat.
  3. For the dressing, whisk together soy sauce, rice vinegar, sugar, sesame oil, garlic, ginger, and salt in a small bowl until sugar dissolves.
  4. In a serving bowl, combine blanched spinach with the dressing and toss gently.
  5. Sprinkle toasted sesame seeds over the salad before serving.
