Ingredients
- 1 bunch fresh spinach (washed and trimmed)
- 2 tablespoons sesame seeds
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1 tablespoon sesame oil
- 1 clove garlic (minced)
- 1 teaspoon fresh ginger (grated)
- Salt (to taste)
Instructions
- Blanch the spinach in boiling water for about 1 minute. Transfer immediately to ice water to stop cooking. Drain and squeeze out excess water.
- In a dry skillet over medium heat, toast sesame seeds until golden and fragrant. Remove from heat.
- For the dressing, whisk together soy sauce, rice vinegar, sugar, sesame oil, garlic, ginger, and salt in a small bowl until sugar dissolves.
- In a serving bowl, combine blanched spinach with the dressing and toss gently.
- Sprinkle toasted sesame seeds over the salad before serving.
