Ingredients
- 5–6 pieces boneless chicken breast or 6–8 pieces boneless chicken thighs
- 1/3 cup soy sauce
- 1/4 cup + 2 tbsp brown sugar
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 6–7 soaked wooden skewers
Instructions
- Soak wooden skewers in water for 10–20 minutes to prevent burning.
- In a mixing bowl, whisk together soy sauce, brown sugar, garlic, ginger, and vinegar until the sugar dissolves.
- Cut chicken into 1–2 inch chunks and marinate them in the mixture for at least 10 minutes.
- In a saucepan, thicken the remaining marinade over medium heat until it coats the back of a spoon.
- Assemble skewers by threading marinated chicken pieces and grill over medium-high heat for about 8–12 minutes, basting with thickened sauce.
