Ingredients

  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter (softened)
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs (beaten)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Prepare your bananas by mashing them until you have 2 1/4 cups.
  2. In a large bowl, mix together flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream butter with both sugars, then add eggs, vanilla, cinnamon, and mashed bananas; stir until well combined.
  4. Combine both mixtures gently until just mixed—avoid overmixing.
  5. Pour batter into a greased pan. Place a trivet in the Instant Pot with 1 cup of water and cover the pan with foil.
  6. Seal the lid of the Instant Pot and cook on manual for 50 minutes; perform quick release after cooking.
  7. Carefully remove the pan using foil handles and let it cool before slicing.
