Ingredients
- 1 cup + 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1/8 teaspoon salt
- 1 cup fresh lemon juice (about 5 lemons)
- 3 large eggs
- 2 tablespoons unsalted butter
- 1 teaspoon grated lemon rind
Instructions
- In a medium saucepan, whisk together sugar, cornstarch, and salt.
- Stir in fresh lemon juice and eggs until well mixed.
- Over medium heat, whisk continuously until the mixture comes to a boil.
- Lower the heat and simmer for about one minute until thickened.
- Remove from heat and stir in unsalted butter and grated lemon rind until fully melted.
- Cool at room temperature before refrigerating for at least six hours.
