  • 2 large boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 teaspoons fresh rosemary chopped (or thyme)
  • 3 tablespoons hot honey
  • 2 cloves garlic minced
  • 3 tablespoons crumbled feta cheese
  • 1 tablespoon lemon juice optional

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken dry and season both sides with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat and sear the chicken for 2–3 minutes on each side until golden brown.
  4. In a mixing bowl, combine hot honey and minced garlic; stir well.
  5. Transfer the seared chicken to a baking dish and pour the hot honey mixture over it evenly.
  6. Top with crumbled feta and tuck rosemary around the chicken.
  7. Bake for 20–25 minutes until the internal temperature reaches 165°F (75°C). Broil for an extra minute if desired.
