  • 3 cloves fresh garlic, minced
  • 1/4 cup hot honey
  • 2 tbsp low-sodium soy sauce
  • 2 bell peppers (any color), sliced
  • 2 green onions, thinly sliced
  • 1 cup cooked rice or quinoa
  • 1 tbsp sesame oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine hot honey, soy sauce, and minced garlic. Add chicken breasts and marinate for at least 15 minutes.
  3. Heat sesame oil in a skillet over medium heat. Sauté sliced bell peppers for about 5 minutes until softened.
  4. Transfer marinated chicken to an oven-safe dish and bake for 20-25 minutes until cooked through (internal temperature should reach 165°F/75°C).
  5. Fluff cooked rice or quinoa in serving bowls. Once the chicken is done, slice it and place it over the rice/quinoa along with sautéed veggies. Garnish with fresh green onions.
