Ingredients
- 1/3 cup lime juice (3 limes)
- 1 shallot, sliced thin
- 2 Thai chiles, stemmed, seeded, and minced
- 1 garlic clove, minced
- 1/2 teaspoon table salt
- 1-2 tablespoons sugar (optional)
- 1 honeydew melon, peeled, halved, seeded, and cut into 1½-inch chunks (6 cups)
- 5 tablespoons chopped fresh cilantro, divided
- 5 tablespoons chopped fresh mint, divided
- 5 tablespoons salted dry-roasted peanuts, chopped fine, divided
Instructions
- In a large mixing bowl, combine lime juice and sliced shallot.
- Using a mortar and pestle (or knife), mash Thai chiles, minced garlic, and salt into a paste; add to the lime juice mix.
- Stir in honeydew melon chunks, along with ¼ cup each of cilantro, mint, and peanuts; toss gently.
- Transfer to a serving bowl and garnish with remaining herbs and peanuts before serving.
