  • 1 shallot, sliced thin
  • 2 Thai chiles, stemmed, seeded, and minced
  • 1 garlic clove, minced
  • 1/2 teaspoon table salt
  • 1-2 tablespoons sugar (optional)
  • 1 honeydew melon, peeled, halved, seeded, and cut into 1½-inch chunks (6 cups)
  • 5 tablespoons chopped fresh cilantro, divided
  • 5 tablespoons chopped fresh mint, divided
  • 5 tablespoons salted dry-roasted peanuts, chopped fine, divided

Instructions

  1. In a large mixing bowl, combine lime juice and sliced shallot.
  2. Using a mortar and pestle (or knife), mash Thai chiles, minced garlic, and salt into a paste; add to the lime juice mix.
  3. Stir in honeydew melon chunks, along with ¼ cup each of cilantro, mint, and peanuts; toss gently.
  4. Transfer to a serving bowl and garnish with remaining herbs and peanuts before serving.
