Instructions
- Prepare the marinade by whisking together honey, lime juice, olive oil, garlic, chili powder, cumin, salt, and pepper in a mixing bowl.
- Marinate the chicken in the mixture for at least 30 minutes (up to 4 hours for better flavor).
- Cook rice according to package instructions using water or chicken broth.
- Preheat a grill or grill pan over medium-high heat and cook the marinated chicken for about 6-7 minutes per side until fully cooked (internal temperature of 165°F).
- Allow the chicken to rest before slicing it.
- Mix the cooked rice with diced avocado, cilantro, lime zest, salt, and pepper.
- Serve by layering avocado rice in bowls topped with sliced chicken and optional garnishes.
